Wort production, commonly called the "hot side" of brewing, is the process of creating a sugary liquid called from the raw ingredients of water, malt, and hops.
The main steps for wort production occur in this order:
- Malting - This is often delegated to maltsters, but this is where the conversion of grain to beer really begins.
- Water preparation - This includes removal of chlorine and dissolved oxygen, and adjusting minerals and acid/base.
- Milling - The grain must be crushed.
- Mashing
- Lautering
- Sparging
- Boiling
- Chilling
