Saccharomyces (shortened as "Sacch" or "Sacc") is a genus of yeast — a genus is a group of species. There are only three main species of yeasts that we use to make beer and wine: S. cerevisiae, S. pastorianus, and S. bayanus. However, within these species there are a vast number of different strains, each with their own characteristics and flavors. The group of "domesticated" strains are generally referred to as "brewers yeast".
