Calcium chloride absorbs water from the air quite rapidly. This is easy to observe: If you leave a few granules out in the open, they will literally form a puddle over a few hours depending on the humidity level. Or if you have some on a sensitive scale, you may notice the weight slowly increasing. This is a problem because as the amount of water increases, the amount of salt by weight decreases, and therefore measuring by weight will not give an accurate representation of the salt content. Commercial difference sources may also have different levels of purity.[1]
