Carbohydrates
Carbohydrates include simple sugars and larger molecules made from chains of sugar units. Barley consists of 70-85% carbohydrates by weight of dry matter.[1][2] The complex mixture of carbohydrates in wort makes up about 92% of the solids in solution.[3]
The following carbohydrates are present in barley (by total dry weight):[1]
- Sugar (1.8–2%)
- Sucrose
- Glucose
- Fructose
- Starch (63%)
- Amylose
- Amylopectin
- Arabinoxylans (4–11%)
- Beta-glucans (3–5%)
- Cellulose (5–6%)
